• 30g Chickpea flour
• 9g kibbled lineseeds/flaxseeds
• 9g chia seeds
• 2g baking soda

• 100ml warm water
• 50g base muesli
Base muesli = any non-sugared mix of rolled oats, barley, rye, spelt, pumpkin seeds etc. (no chocolate, no raisins!)
• Oil (olive, sunflower, rapeseed…)
• Salt
• Spices you like (e.g. pepper, turmeric, ras el-Hanout…)
- Mix together the flour, the seeds and the baking soda.
- Add the muesli to the mix.
- Add the water and mix stir everything together well.
- Add salt and spices as you like. I really like having turmeric in there.
- Let the mix soak up some water until its texture becomes egg-like (2 to 3 minutes).
- Pour a bit of oil into a hot frying pan and pour the omelet mix into it. Spread the omelet, but make sure to avoid holes or fuzzy edges (you’ll need to turn it).
- Fry the omelet until golden brown, pour another bit of oil onto the omelet’s upper side, turn it and fry the other side as desired.
- Serve it with a hearty spread, e.g. hummus or cream cheese. Also try putting on tomatoes, lettuce, mushrooms, spinach etc.

Pro Tips
- You can prepare large quantities of the base dough (flour, seeds and baking soda) and put them into a large jar like in the picture above! Then, when preparing the omelet, use 1 part base dough + 1 part muesli + 2 parts water, e.g. 60g + 60g + 120ml.
- Replace the chickpea flour by wheat flour, remove or reduce the amount of salt and use e.g. cinnamon instead. That way, you get a sweet version of the omelet which can be combined with chocolate spread, applesauce or maple syrup!
